After approximately 2 hours in the air, you will be somewhere over Eastern Europe (possibly Hungary) where the local time will be near enough 3:30pm. I would be very surprised if it were still light 3 to 3.5 hours after takeoff.
I'm guessing that your flight will arrive at approximately 9:00am local time in Hong Kong, so only in the final couple of hours of the flight will you see any daylight.
One thing to bear in mind when travelling East (which you are) is that everything happens so much quicker because of the time zones you pass across. Westbound is the opposite, which I'm sure you will see upon your return.
