However I do think that the finding is that these food items are now assessed as definite causes of cancer and therefore join a list of other known cancer causes such as radiation and cigarette smoke

The link is not working for me now, so I can't check what I read earlier, but I think it said that you are 18% more likely to get colon or rectal cancer if you eat 50g of sausage or bacon a day. The figure is meaningless without more data. Say you have a thousand people who never eat sausage or bacon, and one of them gets the cancer. That means that 1.18 people out of a thousand who do eat the stuff gets the cancer. No reason to give it up, if that's what you like. Can the DM please stop scaring people without more facts to back it up?
I answered on the other thread about this , I doubt I will alter my eating
