This is more about the revolting man who interviewed this woman. I am immunosuppressed and on doctors orders avoid skin to skin contact with people. Had the same thing happened to me as this muslim woman I would have also complained. There was no need to frog march her out of the office. I have muslim tenants and they re lovely. I was told by their refugee support worker about their customs and on meeting them the lady hugged me (allowed woman to woman) and the man gave a huge grin and put his hand on his heart with a bow of the head. What is wrong with that? Did I throw a hissy fit cos he would not shake my hand? Good Grief! All this vitriol about they should do this and they shouldn't do that, what about common decency? The man was well out of order, regardless of why the woman would not shake his hand and he should have been sacked.

Since he was interviewing her for a job it's likely he was the boss.
Many (if not all) Muslims do not use toilet paper, they wash their bums with water and their hand, so perhaps it's better not to bother with the formality of shaking hands with them anyway.
Depends how big the company is Naomi. He could be in HR. She was going for a job as an Interpreter, they would have known she was likely Muslim and should have respected her beliefs.

If I went to a muslim country, I would respect THEIR customs.
In the west it is a custom and a courtesy to shake hands.
This is Europe. Not the Middle East.

Sanmac Good grief! I put a baby gate at the top of the stairs for a young family was that wrong too? FWIW The Muslim family paid for the 'adaption' themselves, keep the house immaculate and make me cakes to take home when I visit them. The last tenants in the house were white christian. They left owing over £1000 trashed the house broke five windows and threw white paint over all the kitchen units. But at least they would have probably shook my hand.

As NJ says...why is it always what offends Muslims?

I've seen many instances where a male Muslim has refused to shake the hand of a lowly female.
They got married in church and had their sprogs christened in church so reckon they must be christians?
