Chip off the old block

I want to install a wooden block work surface in my kitchen. I wanted beech but was advised I'd have to oil it at least once every couple of weeks. Can you suggest any other woods that require less maintenance?

A wood like oak or iroko should only need treating every six months or so - which will save on the elbow grease.
