fermentation of fruit ?
2 Answers
Hi all, I would like to know what is happening in the bowl of fresh fruit I left out of the fridge last night! It was only soft fruit, mango, cherries, strawberries ,kiwi. grapes banana served in fruit juice from a carton. Last night it was yummy, today it is bubbling !! I think it is fermenting and is great fun to watch. I don't know however what is likely to happen next when it has finished bubbling. Is this how one makes fruit wine?? Is the mixture liable to give one tummy ache now it has started this process. ?What happens now? Will it simply sit in the bowl and start smelling foul? Any help appreciated.

If however you follow the basics and transfer to a lidded container and top with 40% min alcohol - rum is best - you'll have the best fruit alcohol drink.

The fermentation you are seeing is due to the sugars in the juice. If you add seasonal fruits which are soft varieties - apples for example don't work - into the mix add allow them to continue fermenting, the addition of the alchohol will make a realy nice drink in time for Christmas - just like the original German concoction.
