Actually, Sandmaster, you don't need flour for a custard sauce. You need eggs, cream or milk and a little sugar. If you add flour you're making confectioner's custard, which is used as a filling for sweet tarts and the like. You CAN use a bit of flour if you're a scaredy cat and think that your custard might curdle, but it's hard to rid the custard of a slight yucky taste without boiling it if you do. Myself, I was taught to make it at cookery school without.
