I have a recipe that requests I use Ginger Puree. I have been to Tesco, Asda & Waitrose, nobody stocks ginger puree. They do stock a ginger paste in sunflower oil or white wine vinegar - I would use the sunflower oil 1 - is this the same thing?
Alternatively should I use fresh ginger & just use a little less than recipe suggests?

Seems to sugeest you just mash up some ginger...
So from the supermarket, it would be in oil/vinegar to be preserved (probably with additional stabilisers/preservatives).
