I'm watching an old episode of CDWM, a 'celeb' contestant is trying to grate parsley....What The Funicular??? How the hell did he think that would be the best way to prepare parsley?
His mum is apparently a chef!!! Well if that is the case he should know that glass is not a good material for a chopping board.
By far the easiest and quickest way to chop parsley ( or mint, or other herbs) is to put the leaves in a cup, and cut back and forth with scissorpoints in the cup.
I chop a lot of parsley (board and knife) then freeze it in Ice cube trays with water, then just use a couple of the ice parsley cubes when I need them.
Tilly, I also have frozen herbs in the freezer. I don't mind cooking with them but find they are not so good for raw recipes or garnishing. They are so handy to have on hand.
