looking to take 2 kids plus the ex away for a week, we can travel from dublin or belfast to canaries.

Me and the missus usually go away at Xmas (not this year due to a poorly dog) and we usually go all inclusive to Tenerife.

I've found https://www.onthebeach.co.uk/ to be quite good. Once you've selected your departure/arrival airports and dates, you can filter by resort and accommodation type, such as all-inclusive.

nothing stopping you also going to a travel agent and comparingt heir prices to ones you find on the net

If you want to check flight only. Go to carriers like Thomson and check their “ leaving tomorrow or within 7 days link. Return flights can be as low as £50pp.
