Do the mash as normal, when done, add apple sauce, mustard and lemon juice to the mash. I always put garlic, some finely chopped onion and occasionally a bit of chilli into my mash.
This is served with pork loins (boneless) in coconut sauce........
Brown the pork (i use two pieces each) in a frying pan with some garlic, ginger and a tiny bit of chilli. Then add a can of coconut milk and simmer. I also put in some mushrooms, peppers and spring onions along with some lemon juice and a pinch of brown sugar to just sweeten it a little.
I simmer this fairly rapidly (stirring frequently) until it reduces. Just before the end, i add a little double cream and reduce further until the sauce is as thick as you like it.
Serve with the mash
