My GF in the States makes stewed tomatoes with celery and onions. All in purpose made canning jars. She leaves it for about 3-4 months then turns it into salsa.
It tastes so good i have eaten a two pint jar to myself this week. I brought two jars back with me, she has had to mail another two. You can use it as the base for a chili (it is not hot)or put it with anything.
People ask her to swap her salsa for their home made stuff like Maple syrup or canned pears etc.
I am sure she will tell me how, if anyone wants to know, it is so good people eat it out of the jar.

And when i do, she did tell me that it is about 6 months that she leaves the stewed tomatoes, so you will still have to wait, whereas when i go to the US in a month, she has got buckets of it. It really is remarkably good.
