Not necessarily, puddicat, but there is always one person co-ordinating and managing that particular funeral - directing it. He or she is the one that liaises with the family on the day of the funeral, and is responsible for managing the coffin bearers, hearse drivers and so on, gives the orders.

He or she is the director of that funeral, and if the family want a walking escort, he is she will be the one to do it.

At our local funeral parlour the boss, or sometimes his wife does it. [His wife is also a partner in the business]
I don`t know if there`s a specific name for the job, though.

Sometimes there can be more than funeral and they can overlap, so the 'boss' can't always do it. Some bosses can't do it, because of disability, for example.
