Well I seem to have got my baking bug back!
Thanks to all that helped with my Children in Need baking threads, the cake and brownies all got devoured and got donations towards the charity :) The brownies flew off and people were coming back for more, would have made a load more if I'd have known! Got some really good comments about my cake too :)
Had some stuff to use up and figured I'd treat my work colleagues so have just made a chocolate sponge with vanilla buttercream in the middle and melted chocolate on the top.
I'm hoping to make more stuff now I've got going again and my new electric whisk has helped with arthritis wrist issues so if anyone has favourite cake receipes so share I'd love to hear them for some inspiration :)

5 ozs margarine
3ozs sugar
8ozs flour
4ozs oats
A good half jar of mincemeat
Melt the marg and sugar in the microwave, 1 to 2 mins till melted.
Stir in the flour and oats.
Put half the mixture on the base of a pyrex type dish, about 9" diameter, or a square/oblong one 7" x 9" ish (it really does not matter) which has been lined with either cling film or greasproof type paper.
Put a good layer of mincemeat on top of the base, and then cover the mincemeat with the rest of the mixture.
Smooth the top and cook in the microwave for about 5 - 6 mins for 750W or a bit more, if the microwave is not as powerful.
Leave to cool, and cut into squares/slices.
