It just means that other things can be nice too.
I've never heard of the expression so I don't know the context. I suppose it could mean that "you can't judge a book by the cover" - just because the apple's not red, doesn't mean it's not tasty.
And that, what seems nice can in fact not be....

What does the red apple symbolise coccinelle?
Does it have to symbolise anything? I read it as a factual statement. It looks nice and it tastes nice.

There's a bigger life meaning and a possible hidden meaning as well in this phrase yet i just can't put my finger on it.
A juicy red apple is what everyone looks for in an apple however not every apple is red or juicy so don't judge OR don't be mistaken by appearance.

Not heard of it. I'm unsure it has much meaning. it starts off with a claim about a red apple which implies, to my mind, a general claim for all red apples: but which we know from experience need not be true for all. It then goes on to say that there are other apples of a different colour, but makes no claim for them. (Although the "but" may imply the other non-red apples might not be nice.)

If I had to hazard a guess I'd suggest it means something along the lines of, just because something has pleased you, it doesn't mean all similar somethings will also please you. That it is unwise to make such an assumption.
Is it anything like oranges are not the only fruit?

Does it possibly mean that the "Juicy red apple" could be a friendship or realtionship and the "Not every apple is red" the fact that not all red apples are sweet and juicy and some green and bitter so you can't trust no one and you could be stabbed in the back so in essence never let your guard down?
I only remember the phrase as a dance track in the 90's but it must have come from somewhere.

I think it means that what seems to be juicy and good is in fact not, it has in fact a (hidden) flaw to it!

I think you're trying to read too much into it. I've never heard this expression, where do you hear it? You could interpret it in a number of ways, there's nothing hidden IMO. Lots of nice apples aren't red, so don't discount them because they are a different colour.
I always avoid red apples, I find them dry and bland.
Back the 90's I was told that it was a song about Red Apple 'Es' and to be careful because nasty knock off pills of a different colour with an apple symbol on them were being sold ... oh and the apple was not fruit but the apple computers logo.

So red pill with the apple computer logo was the original one ... but not every apple is red.

That was what I was told ... could just be a great story :)
