You can dip items to be fried in egg and then coat them in breadcrumbs. This seals the item away from the fat if it would absorb a lot of fat uncoated, or might just fall apart in the fat. and also gives a delicious crispy coating. Its an alternative to batter as used for tempura.
Fried green tomatoes are a typically Southern (U.S.) treat.
