I am having a plaque engraved and the first line says
Happy Landings, Dave and the second line says
Your Athens Crew
Should it be Your Athen's Crew? Thanks for helping me out!

The name of the city (a proper noun) is being used adjectivally. I suppose you are thinking "Your Athens Crew'"could be expressed as "Your Crew of Athens", in which case you could just about rearrange it to say "Your Athens' Crew", but Quizmonkey is quite right.
