Apparently " Be prepared always; first impressions are deceptive" A green Yule means a mild early part of Winter. In Britain the worst Winter may have a mild start. Historically the very worst weather comes later and often suddenly; this weather may kill thousands. So we should be prepared and not be fooled by the early mildness; being unprepared for the sudden chill we may die for our folly. 'A fat churchyard' means 'a full graveyard' full of the foolish victims.
Theres more to this as well. influenza, the biggest winter killer, loves mild wet inter weatehr. it helps it spread. so this may be epidemiological advice too.
