Why do we sometimes call eggs, "chucie eggs" ?

Because they come from 'chucky hens', and are not eggs from ducks, geese, quails, (or even ostriches!).
The word, 'chuckie', has been a nursery-word for 'chicken' since the 1700s in much the same way as 'gee-gee' has been for 'horse'.

When I was young in Derby eggs were 'chucky eggs' and hens were always called 'chucky fowls'.
