Usually anthing with Bi in front of it means two of so why is the word unisex as it is when surely it should be bisex?

Bisexual (well you know) Bicycle (two wheels)
Unisex.. oh HUH? lol

I imagine the idea is that both - or even all - sexes will be treated as one in that particular establishment.

people are bisexual, but it might not increase sales if you called clothing (say) bisexual

Unisex means one as in unisex clothing when one type of clothing is suitable for anybody.
Bisexual is somebody with 2 types of preference, their own sex and the opposite sex.
