Anyone know the word which describes an outline drawing of buildings, hills & mountains etc which can be seen from a viewpoint, and labels the sights (sites?!) for the benefit of the viewer

I don't believe there is one specific term, but the same technique is used for group photographs. Some derivative of silhouette perhaps?
I'm not sure that there's any one specific word of phrase, but the word orientation usually comes into it - eg orientation map or orientation diagram. Where the diagram is set out on a freestanding, round table, this is usually referred to as an "orientation table".

It sounds like a "skyline" to me.
Famous, I think the term you are looking for in architecture is "elevation" which I have always taken it to mean a drawing of a proposed building in relation to its surroundings. In the elevations that were presented to me, the surroundings were sometimes labeled and sometimes not.
