What shall I make using cognac/brandy?

My hubby bought four cognac/brandy samples to decide which he likes, rather than waste money on a big bottle. As I suspected, he wasn't very impressed with any of them.
So now I have the equivalent of three sample-sized bottles of cognac and brandy. I don't want to chuck it, and we don't want to drink it, so can I have suggestions of what to make with it?
I have a feeling something chocolate-related would go down well but am open to any and all suggestions, be they savoury or sweet.

sandyRoe - he tried adding water and it was no better - he's trying to track down something 'caramel tasting' that he once tried but can't remember what its called!

when i make mine i just melt chocolate, add cream and flavourings until it looks right lol.

sylabub - whip up a 10 fl oz carton of double cream. add one of the bottles of brandy, the juice and finely grated rind of a lemon, and 3 oz sugar. whip it all up again and divide into individual dishes/large wine glasses. put in fridge for a couple of hours. serve with sponge fingers. total heaven :)

i buy half a bottle of cheap stuff every now and again and it keeps for ever!
I have it in cupboard with my stock cubes and condiments. I use it in
gravy
sauces
garlic mushrooms
pate
puddings - cherries, bananas blueberries etc with pancakes
mushroom soup
I would just keep it and use as and when.
(or give as a gift!)
