I am thinking along the line of a potato,cheese and bacon fritter.It has to be easy quick and yummy.
Any thoughts?

Yes. I do it but stuff them inside potato skins.

I'd add spring onion

I'd add a bit of onion too. Sounds lovely with some sausages and onion gravy..........

Yes, I just add normal onion, but I'm off to the market now so I think I'll get some spring onion for next time
