Here's one possible explanation:-

at the bottom right on this page http://en.wikipedia.org/wiki/Chinese_phoenix you'll see that there is a drawing with the caption Drawing of a Fenghuang (Fum Hoam) by a Dutchman, circa 1664 and so if the fenghuang (Chinese phoenix) can be referred to as fum then the feminine version of that name would be fumette.
