All filled in (except one) got the poem and the speaker.But, there's always a but with me!
I assume what the speaker claims to have done is: A S...... O. A G....
So I've no idea which letters to rearrange or what to highlight.
Please can some kind person enlighten me and have I got the 'what he claims to have done' correct?
Also I don't 'get' the wordplay for 43 across(a letter has to be changed in the definition and the replaced letter should be G) Elfin folk may use this condiment without date - doh! (4) SA?T (I assume salt but have no idea why!!!!

43 Saut, a Scottish word for 'salt' (Elfin should be Elgin).
I'm not sure about your A S...stuff. The letters to be rearranged are in two rows - one word is in the centre, the other is at the bottom. You'll be left with real words. The highlighting is very close to the rearranged words.

Yes I've got the "B...... ... ...E" but I've no idea what to rearrange. I'm assuming it's wines and I'm assuming the highlighting will be red & white?????
I personally only drink Scotch!!!!!

Ripper, you've to rearrange letters so that you have the M....B... The highlighting involves two of the things you mentioned, one red and one white (though it's not that colour in the bottle). The 'saut' earlier was significant!

Right, I've got the two 'things' to highlight. I've tried to make an anagram of the remaining letters in the two rows that contain the 'things' (of which there are 11 letters)but can't find one. So what am I doing wrong and please can I have a hint about M.... B...

I have the structure from the poem and created the new words. I assume that there are a couple of wines to highlight and I thought that I knew my wines ! I can see Rioja but try as I might I cannot see the other, which no doubt is staring me in the face !

Ripper, five- letter word (M)is in the bottom row,the six-letter one is in the row with the red. All you need to do is shuffle a few letters!

Ripper,
You have the name of the structure but in the grid the two parts are changed round. In the bottom row take the middle five letters and rearrange them, and you'll still have five real words running vertically. Do the same in row six !

Thanks for the wines. As I said, they were staring me in the face ! Having found a continuous chain of five letters that spelled out Rioja I was looking for another continuous chain and couldn't find one !
