Hola Brenda, del Reino Unido!
The Answerbank is a UK-based site so we don't have a lot of experts on US domestic travel around here. However, here's what I've come up with:
Your problem seems to centre around the fact that your nearest airports (Las Vegas Municipal and Santa Fe) don't handle the large aircraft which offer cheap flights. It looks as if you'll have to fly from Albuquerque.
Delta can fly you to Jacksonville, from Albuquerque via Atlanta, for $188.50 per adult (including taxes & charges), with departures at 0630 or 0800.
American Airlines' price is slightly higher but the times might be more convenient for you. They have flights, via Dallas, at 1045, 1435 or 1720, for $262.50 per adult (inc. t&c).
United have a flight, via Washington, at 0811 for $238.50 per adult.

Continental's server gives me prices in British pounds but I can still see that they've got some cheap fares. Their flights are via Houston. The 0615 flight is 60.40 (about $120?) per adult, including t&c. At 1045 it's 92.70 (about $195?). The 1340 flight is 75.40 ($150?). (NB: I've just re-checked some of those prices and they seem to have rocketed within the space of a few minutes. It would be best to check them for yourself).
The airlines will carry your baby for free if he/she doesn't occupy a seat. Alternatively, you can book an infant fare. (That's based upon the information on the Delta website. Check with the appropriate airline for precise information).
That just leaves the problem of how to get to Albuquerque. Amtrak will take you there, from Las Vegas (NM), for just $22 per adult. (Baby goes free). However, the only train is at 1238, getting to Albuquerque at 1555. It might be worth investigating the possibility of getting a cab to the airport, to get the 1720 AA flight but I'm not sure how long you need to allow to check in. (That way would get you all to Jacksonville for about $570, plus the cost of the taxi). Alternatively, check the websites of the airlines I've mentioned to see if there are any later flights which I've not noticed.
To get the best bargains, you might find it necessary to stay in Albuquerque overnight.
Hoping something here helps.
