How much to pay employee who sleeps over in hotel

I have an employee who occasionally sleeps over in my hotel when we have guests in. She wants to be paid £3 for every hour she sleeps over after 2am when the bar closes. To my knowledge she has only once had to get up to attend to a guest & quite frankly if she is right she will undoubtedly ruin us. For example last week we had only 1 guest staying over & from a £55.00 payment once all expenses had been taken out (VAT, commission to late rooms, laundry, tea, coffee etc etc & of course her attendance allowance) we were left with £3.32!!!!! What should I be paying - is it possible to offer a flat rate fee of say £10/night? Please bear in mind that when she does stay over is is occupying a room!
