Nice Cheese for Welsh Rarebit

I'm having problems finding a nice cheese to make welsh rarebit. Most cheeses don't seem to bubble and brown under the grill and this is a requirement. I don't want a very mature cheese nor anything too mild - a good medium cheddar is probably what I'm looking for or possibly a standard mature cheese at a push.. Does anyone have any suggestions please?
