I think it should be the stomach.
The breaking down of food in the mouth, ie chewing, is mastication.
Digestion is defined more precisely as:
The process by which food is converted into substances that can be absorbed and assimilated by the body. It is accomplished in the alimentary canal by the mechanical and enzymatic breakdown of foods into simpler chemical compounds.

It's the difference between "breaking down" and "assimilating".
Mouth. The chewing and saliva are part of the process.
Saliva is a digestive enzyme which starts the breakdown of starches therefore digestion begins in the mouth
Sorry should have added "conversion of starches into sugars"
when your saliva mixes with the food in your mouth, we were taught! xx
