Take the six letter word, derived from Arabic, meaning a bare rocky expanse of desert. Remove the first letter of that word and replace it with another letter and you make the name of an International chain of inns and hotels. What is the name of the chain of hotels?

Could be (RAMADA)

HAMMADA is arabic for rocky desert but that has 7 letters ,but there must be a connection there somewhere
Like most words being transcribed into English from Arabic, double letters are frequently just given single-letter form, so 'hammada' could as easily appear as 'hamada', as that is basically how it sounds. There is no doubt but that the answer is 'Ramada'.
