Pineapple Upside Down Cake Garnish

Daughter is making PUDC for a BTEC tomorrow, teacher told her it needs some kind of decoration/garnish to serve. What would you use? I think they look pretty enough as they are, maybe just a bit of icing sugar.

Any ideas?

The old favourites, cherries and angelica?
Mint leaves look good, if she wanted to be posh, she could sugar them today and let them dry overnight.....but I think the bright green of the unsugared fresh mint leaves and the minty scent would be lovely with pineapple.....of course she is putting a cherry in the holes in the pineapple slices? I wouldn't do icing sugar myself.

Yep, cherries in the middle of the pineapple ring. The mint sounds like a good idea, would that be a bit of egg white brushed onto the leaves, then dip in sugar?

yes, needs to be caster sugar as granulated is too heavy to stick. needs doing today then dry somewhere warm and airy overnight. Be warned that for some reason, the sugar doesn't always stick, so keep some unsugared for plan B

How about doing some chrystalised/caramelised pineapple or ginger or candied cherries.

That sounds lovely Eve, unfortunately timing would be a bit tight. She has her plan and she needs to stick to it. Might get her to do one at home with caramelised pineapple though.
