I'm getting bored with my diet, anyone got any recipes to spice it up?
Money is a bit tight at the moment but I still manage to eat well by shopping around. I can buy 2 carrier bags full of fruit, veg and salad from my local outdoor market for less than a tenner, stores like Poundland, B&M and Iceland have been invaluable at times when Ive been a bit strapped.
But even though Im fortunate enough to be able to eat well (when so many are using food banks etc) I would like to try different recipes/combinations of food.
Anyone got any personal recipes I could try out?
(I love hot/spicy stuff but theres only so many curries to concoct)

Turkey chili. Turkey thigh mince is cheaper than breast (Aldi`s is good) I throw it in a pan with a tin of chopped tomato, diced red pepper, sliced mushrooms and barlotti beans (you can use other beans such as red kidney, butter, cannellini beans) and a packet of spice mix. You can have it with rice, crusty bread (my favourite) or over a jacket potato.
Take a look on Pinterest. Put budget recipes into the search box and there should be a lot of good things to try. A lot of them may be American recipes but
you can find or substitute a lot of the ingredients. I've quite a few listed to try out
homemade macaroni cheese works for me, add a wee bit of bacon, leeks, onions, chorizo, mushrooms, toms, whatever you can afford, some chipotle or chillis adding a wee bit of flavour too......
Chicken and sweetcorn chowder:
Sweat a small/medium chopped onion in butter.
Add a short pound of diced potato. Soften.
Add a serving spoon of flour to absorb fat
Add 2 pints of (preferably) home made chicken stock. Season.
Bring to boil and simmer until pots are very soft (25/30 mins).
Add half a tin (size to suit your taste) of nice crisp good quality Sweetcorn niblets.
Squash with a masher then blitz or blend.
Add as much diced/shredded chicken as you want and the other half tin of sweetcorn. Adjust seasoning.
Add milk or cream if desired to achieve consistency you like.
Heat through without boiling.
Should give 4/5 good helpings.
I recently bought a leek, carrot, parsnip, onion, head of broccoli & courgette, chopped them into chunks & cooked them all together with a good handful of pasta. I made a cheese sauce & after the veg was drained I poured it over the veg/pasta mix. It made two large meals for me. Hope this helps. The cost was less than 85p excluding the cheese sauce.
Make a tomato sauce (sweated off onion & garlic, purée and tomatoes), chuck in shop brand smoked sausage and have with pasta sprinkled with cheese (I use two sausages and it costs just under £3 and serves six huge portion sizes).

go for cheap cuts of meat and offal if you are happy with that.
Nice recipe posted several months ago which I gratefully copied as a quick knock up stand by. Minced beef rostis (you could use tinned mince beef).
Will go back and search and post it to you. A winner in our house with my little grand daughters.
It was only recently that I discovered how to make an egg frittata.. (bear in mind that Im a man and I miss a womans touch when it comes to food....Im a decorator, not a cook. I can hang wallpaper but cant knock up a roast) lol
One of my favourite uses for leftover meat is a kind of hash...chop the meat and panfry with some butter. Throw in a beaten egg or two and scramble it all up. Top with lots of grated cheese.
You can do a lot with a bottle of Schwartz cajun seasoning. Put it over a chicken breast, roast, slice and put it on a nice salad. Put it on shrimp and do the same. Sprinkle over a pizza. I use a lot of that
Potatoes and eggs...brown some leftover potatoes with some sliced onions. Pour over eggs and stir til cooked...add cheese. ( very like previous hash...eggs,cheese and anything else you fancy).
