Looking for ideas for one pot dishes for a 50th birthday party catering for veggies and gluten free too. Wondering also whether best to just do finger food or hot and finger food. Catering for approximately 30 people. Thank you!

do you have access to slow cookers, you could do a variety of curries/chillies (meat and veg) in them and have accompaniments to suit
Jacket potatoes with a big variety of fillings?
A hot fork buffet will be much easier to prepare and serve.

As a compromise you could do a middle eastern mezze as a nibble/starter on tables, various dips and bread, crudités for guests to nibble on.

For main course a selection of tagines (chicken/lamb/squash) with cous cous and a chopped salad.
I have given up serving dainty finger food as my guests far prefer a large hotpot or a huge lasagne or moussaka. I serve beetroot and red cabbage with the hotpot and salad and garlic bread with the others. Stress free and easy
