can anyone help with suggestions for a dinner party dessert using apples and quinces. I wanted to do an apple & quince tarte tatin, but we are doing duck wellingtons for the main course (non negotiable) so don't want to serve a puff pastry dessert after a puff pastry mains.
Something that can mostly be prepped in advance, as there will be 6 of us, and I don't want to spend most of the evening in the kitchen over a hot stove!
Or not necessarily apple or quince. But something classic but not too fussy.
And has anyone got any suggestions for my question of yesterday re bottling quince - see below ....
A crumble with added walnuts would be my first thought. To make the topping lighter swap out half the flour and replace with oats and use Demerara or soft brown sugar for flavour.
Cook apple and quince together. Put in shallow-ish dish. Make a caramel and pour over cooled fruit. When it's cold, just before serving crack the caramel with the back of a spoon. Serve with creme fraiche. Simple!
