Could beef be "shin" , "p" for power, and "me" ......... putting them together gives SHIPMEN which could be an answer for "captains".  Sorry, I haven't started my Bare Bones yet, but this came to mind.  Can't help on the other yet. Looks like an anagram somewhere.
