Nice Packed Lunches . Healthy Options ?

i made brown rice with chilli con carne yeterday for my lunch but on hindsight it was probably more fattening than a ham samwhich. i can never make a decent nice tasting salad . today im eating noodles in work , im sick of tea , samwhiches, crisps etc

Plain boiled rice isn't that bad if you use portion control. And chilli or other sauces could contain minimum fat/calories if you take care preparing it yourself. Use lots of blended veg in it for 'five a day' healthiness. Also consider oily fish. We are advised to have that twice a week and could be flaked for the basis of a main meal ingredient.
salad is lovely it doesnt have to be lettuce/tom/cuc.
i have spinach, couple types of lettuce, peppers, olives, chicory, avocado with a little bit of cheese and sometimes meat or fish added.
Assuming you can heat stuff up - you could make soups, really healthy, you control what goes into it. i make a spicy carrot/lentil soup which i'll eat with pitta or flat breads.
I also make a lentil/chicken/spinach curry which is really tasty and you don't need extra carbs like rice.

Rice noodles with julienned veg, protein of choice and a dressing of soy, sesame oil, lime juice and chilli.
Greek salad with pitta.
Pasta salad with crunchy veg of choice, lemon mayonnaise and tuna.
Quinoa with roasted squash and goats cheese with a sherry vinegar dressing.
Carmargue red rice with roasted peppers, sun dried tomatoes, whatever takes your fancy with a balsamic dressing, again add your protein of choice.
Agree with the suggestion of soups, even if you don't have a microwave to hand a flask will see you through the day.
