how difficult will the business of government become if every contentious issue ends up having to be decided by the courts?

I'm not sure how many Gina Miller type figures are out there who are prepared to challenge the intentions of Government.

The only winners are the legal bods who will be raking in the cash.

It all depends how strongly one feels about the perceived injustice and ill thought out issues.

Whether it's climate issues, bedroom tax, Universal Credit etc there is always the potential to challenge in the courts and many cases have been successful.

Sometimes legislation is flawed.

They can't decide though can they. They are legally allowed to challenge which is different.

The court have the power to decide.
A member of the public is not deciding. A court will decide if it's appropriate to hear the challenge and if it is, a court will make the decision.
If stirrers like Gina Miller didn't initiate this rubbish the courts would have nothing to decide.She is the prime mover.
As AOG said, leaving aside Brexit, there are countless examples of challenges which have succeeded in the courts.

I didn't say you did. What I mean is that if it's unlawful, it should be challenged and if it is unlawful, the courts will confirm it. If it's legal, the courts will confirm it.

If it's possibly illegal, the courts will give a decision and remove the doubt either way.

The problem is she is not challenging this because it might be unlawful, she's challenging it in the hope of destroying Brexit. Things only become unlawful / lawful when it suits her, Brexit was achieved lawfully was it not?

Miller doesn't make the decision whether or not this is unlawful, so it's a nonsense that she decides on legality "when it suits her". She quite correctly challenged the legality of whether or not further legislation was needed to Notify under Article 50, and she would be at least well-justified in questioning whether suspension of Parliament for the purposes of forcing through a particular form of Brexit is legal or not.
