I'd go for the island of Koh Samui. Choeng Mon beach is perfect for you requirements - quiet throughout the day, and peaceful in the evening. There are a few bars and restaurants along the 600m long beach, but no music or parties. If you do fancy a night out,you are only 10 minutes away in a taxi from lively Chaweng.
I would highly recommend the Sala Samui Resort & Spa. My wife and I spent an amazing 9 nights there last July.
