Certainly it is very obscure, but a wild horse becomes "broken" once it accepts the "bit". If it has not yet been broken, then it is still bitless!
Also a "bit" can mean a small acting part with a few lines to deliver! Less than this and you are an "extra" without words to deliver. Hence "bitless" could be taken as a non-speaking part in a play - where one remains mum!
