This evening I cooked yummy liver and bacon for my children and husband for dinner which they all liked (except by my son; but hey, it's the middle to end of the month and liver and bacon is cheap as chips.)
I have a brilliant butcher who tells me all sorts of old fashioned things and how to cook them and money saving tips too (now there's a thing you don't get from the YTS kids in tesco). He told me today that hearts are also tasty and delicious, cheap as chips and very good for you (my daughter and I have an Iron issue which is why we eat such rich foods.) However, he was too busy to go on and give me a good recipe.
Does anyone know any tried and tested yummy recipes for stuffed or otherwise Hearts? I would love to know how granny did them and any other old fashioned recipes. They are really useful for me as many of them are gluten free and my daughter and I are coeliac.

An old style recipe is to stuff lamb heart with bacon and mushroom - just saute and season, and add a couple of strong herbs like rosemary and thyme. Stuff the heart and bake to finish. Dress with a simple white sauce and serve with seasonal veg.
