Which is the odd word out and why?

I would suggest Minim as the only word not formed entirely of Roman Numerals.

Could it be that MIX is the only one that has a value (1009) in Roman Numerals?

Now this may sound obvious and is probably an idiotic suggestion but would it be ILLICIT? Taking the other words and looking at the I there's the pattern of 2,1,(3),2,1,2,1,2. Told you it was a daft idea but it does fit,
