I'm visiting Canada later in the year and hope to see as much as possible. I don't want to plan down to the last second and want to come home once I've had enough. Can I enter Canada with a one way ticket with the intention of buying a return tickert once I'm ready or will they put me on the nexr plane home as soon as they see the one way ticket!?

A return ticket is not actually obligatory for UK passport holders

However your lack of definite plans may cause them sufficient suspicion to question you closely on your finances, etc, and if you give them cause to doubt that you can and will leave in due course you may get sent home.
Agree with the above. One way tickets are readily available but would advise taking an itinerary with you. This will help to prove your intentions as a tourist especially if you pre book some sightseeing trips
