Would someone please explain the wordplay
6d Heading north , a German carries bitter salt. I think answer is nitrate.
21a Unit for energy in boiling hot water-this unit?
Answer watt hour. I thought it must be an anagram of hot water but you would need to replace the e by a u.

21a. Yes an anagram but swapping U for A (Unit for Energy)
6d "a" in German is ein around tart (bitter) heading North i.e. reversed = ni trat e
Don,t worry BAMBERGER. I came on to verify also.I stiil don,t see where it suggests to change the E to U.I don,t do the Mail . Only picked it up while waiting at King,s Cross station.Regards LYSANDER
