I've come across both variants in crosswords, but the S or Z is normally one of the check letters. The definitions for both are identical:

Quick definitions (teazel)

▸ noun: any of several herbs of the genus Dipsacus native to the Old World having flower heads surrounded by spiny bracts
Chambers give the spelling as - Teasel also Teazel or Teazle - so they should accept any one of the 3, but whether that works in practice remains to be seen. :-)))
I went with teasel. As JimJools says, that is given as the preferred version in Chambers. That is also the case in OED.
