A very simple question this but I'm not much of a chef. This is based on a ready meal I bought a couple of years ago and it was basically sliced boiled potatoes, smoked Haddock with leeks and broccoli covered in a cheese sauce. How would you make the sauce? keep it simple maybe or do you have any ideas that would improve it?

Sounds just delicious as it is.
Only thing I would think of adding is a sprinkling of breadcrumbs on top, then put it under the grill to brown.
I do a cheese sauce with Cornflour, milk and grated cheese, really simple
I do it with flour and butter, equal amounts. Melt butter, add the flour and cook while stirring for a few mins. Start adding milk and keep stirring...it will keep thickening up so keep adding milk until you have the thickness you require. Add the cheese....black pepper and sometimes a teaspoon of mustard.
Gotta be whole grain mustard . Yum Yum.

Toasted breadcrumbs? I like that idea ladyalex , now I'm thinking it, it could have used a little extra crunch. Wholegrain mustard & black pepper. O.K thanks, I'll have a dabble and see what happens. Thanks all.
Happy to help :-))
Hope you enjoy it. Yum yum
I make white sauce like Ummm. One little tip, use a balloon whisk instead of a wooden spoon. It speeds up the process by a great deal.
