Nice Cheese for Welsh Rarebit

I'm having problems finding a nice cheese to make welsh rarebit. Most cheeses don't seem to bubble and brown under the grill and this is a requirement. I don't want a very mature cheese nor anything too mild - a good medium cheddar is probably what I'm looking for or possibly a standard mature cheese at a push.. Does anyone have any suggestions please?
I'm fed up trying out cheese after cheese!

When I said brown, I meant browning at the top of the cheese bubbles if you know what I mean!
I just use ordinary medium mature cheddar. Grate it and mix with egg, paprika and mustard powder with a bit of salt and pepper and lee and perrins. Always bubbles and browns nicely.
Find your way to your nearest Waitrose store and buy some Keen's Cheddar. It's made from unpasteurised milk and it's absolutely gorgeous. (Some branches of Sainsbury's also stock it). It should be ideal for Welsh Rarebit:

I use mature cheddar but the grill shelf has to be almost touching the flame
Further to Tamborine's post:
The golden rule is "If your smoke detector hasn't gone off, your grill's not hot enough" ;-)

i.e. you need to let your grill get REALLY hot before putting your Welsh Rarebit underneath it.
