Christmas Leftovers - Turkey Curry
Good Morning All,
You'll all be glad to hear that I am nearly over my bought of disgusting sniffles/flu/vileness
And thus my appetite returns and I start thinking about food again!
It seems to be a traditional thing to make a kind of turkey-curry-leftovers-thingy on boxing day. I want to know, what is in your recipe? What to you chuck in?
Alternatives also welcome!

- Marinate for 30 minutes or more.
- Heat oil in thick-bottom pot or skillet.
- Mix curry powder with 1/4 cup of water until smooth; add to hot oil and cook 2 minutes.
- Add turkey and stir to coat in curry; cook until all water dries out; stir well.
- Add tomatoes and onion; cook for a minute; stir in 1/2 cup hot water.
- Lower heat to medium; cover and cook until meat is tender; add more water if more gravy is necessary.
You could also add a couple potatoes, peeled and cut into chunks. Will help make gravy nice and thick. Serve curry over rice or eat with bread or however you like.

Turkey curry without fruit, Society? Never!

My usual way of making a turkey curry would be a variation on that recipe, replacing the pineapple with sultanas. (I usually cook 'by instinct' and just throw in what seems best, rather than actually following a recipe).
