Picked up my bottle of juice and noticed that the level of the juice inside was right up under the bottle top .

Opened bottle and the level of the juice dropped ( no that was before i drank any ) down by approx an inch or so .

Is there a chemical or something explanation for that ?

I just thought - was it air inside that had ' increased ' the volume .
Could there have been a vacuum in the sealed bottle? When it was broken the bottle, assuming it was plastic, would resume a different shape and the level of the contents would fall?

I didn't notice any change in shape of the bottle
A question similar to this was asked a few months ago. The answer is probably that you didn't notice that the bottle hadn't adopted it's maximum volume before you relased the cap. An alterative is that the contents of the bottle were under pressure and when you reduced the pressure by undoing the cap small bubbles were formed which increased the apparent volume of the liquid. Being very small these bubbles took some time to rise to the surface and escape. You can test this hypothesis on your next bottle by marking the original level, releasing the cap, marking the new level then leaving it for a few minutes to see if the level goes down again. Do this 10 minutes before you need to drink the contents.:o)
When you opened the bottle the contents were subjected to atmospheric pressure.
Plastic bottles are vacuum sealed. The deformation of the bottle is too small to notice, but it is there
