Is there any law or protection which prevents you from making a hologramatic projection of Adolf Hitler, Jimmy Savile, etc, etc?

No there shouldn't be a law, it makes making films awkward and I've lived in Germany where it is illegal to display anything Nazi orientated and whilst that's largely a good thing- someone reproduced some 1930's Newspapers actually as an educational tool, and they ended up being threatened with jail and had to discontinue, and it was a real pity because they were really interesting. People need to be educated and you can't adequately do that if you have to tread on eggshells.
A recent programme on TV declared that Hitler had images of himself copyrighted. People printing his image had to pay a fee. he even received royalties on his picture on postage stamps. He made millions from this, some of which is still being tracked down. Imagine if this copyright of his was passed on to those of his kin who are still alive today?

The use of flags from the German Third Reich (1933-1945) is currently subject to legal restrictions in a number of countries. Whilst legal in the overwhelming majority of countries, the display of flags associated with the Nazi regime is subject to restriction or an outright ban in others, particularly those with a direct involvement in the Second World War, and Germany itself.
The OP however is not about displaying Nazi insignia, but images of people and you can make images of whomever you like, but if you are making a hologram from someone else's photograph you might infringe copyright, but even so it would be almost impossible to make a case against an individual depiction.
The guy who's photograph of Che Guaviera has been reproduced millions of times, never could stop it, didn't make cent out of it.
