You can do it, but even with a fine natural brush it's often difficult to not have brush marks after the application. I would suggest that you use an aerosol varnish instead. It leaves a nice finish if put on with at least two very light coats… three's even better. Allow the piece to dry between coats and try to keep it in a dust free area until finished.
If you feel you have to brush it on, use very light coats… just enough to barely cover the area. Don't over brush it…gloss over matte can leave tiny bubbles that detract from the work once it dries...

The bubbles you get is from brushing too fast fast -try it or from using varnish you have just stirred
The fact is I have varnished boats and boat parts for many years and it is all about taking time ,rush and you get a rush job but please check on the types oil or water based as it essential to use the same or remove the old one and use the best brush you can afford and NEVER ONE THAT HAS BEEN NEAR PAINT unless you want some special effect
