If I am telling someone that my son wants to be a geo-scientest or a geolocical scientest, do I capitalize the words geological and scientest? Thank you!

No...you wouldn't tell anyone he was a Teacher or a Salesman, would you? Names of professions are not capitalised.

No, but you should spell scientist this way ;)
The proper work for a geological scientist is a geologist. I work for a seismic company (as a financial analyst) and I'm surrounded by geologists!

And they ALL have beards as well.
(Ok, I may be exaggerating that.)
